Hi. I’m Judy Brosco on behalf of Expert Village
and in this next step, I’m going to show you how to make chocolate mousse which is the
filling for our yule log cake. The ingredients you’re going to need are four ounces of semi
sweet chocolate, four tablespoons of unsalted creamy butter, four large eggs separated,
a pinch of cream of tartar and a half a cup of heavy cream. We’re going to use a double
boiler over at the stove top. We’re going to turn our fire on and we’re going to melt
our chocolate and our butter. We’re going to let that melt and once it melts, we’ll
stir it until it’s smooth. Go ahead and use your whisk and give it a stir and help it
along as it melts. Stirring with your whisk until it’s all melted. We’ll shut the fire.
When it’s completely melted, we’re going to place it in a larger bowl to cool. Next we’re going to whisk in our four egg
yolks, into that chocolate mixture. And then we’ll set it aside until it cools to room
temperature. Okay, the next step in the mousse is to whip our egg whites. We have our four
egg whites that we’ll dump into our heavy duty mixer and a pinch of cream of tartar.
And we’re going to whip them on high until they’re stiff. Okay, you’ll know your egg
whites are stiff when they’re sticking to the egg beater like such. We’re now in the next step going to incorporate
this into the chocolate mixture.
